By turning his NLG. It has the same wingspan as the A320 and A319.

agreed but the A321 has a way longer fuelage, so you need to make the turn later than the A320/319

Parking was a little bit to fast while doing it in external view, showing you the tip clearance.

You‘d probably be surprised. These LH dudes are most likely training such parking at EDDF and have memorized their specific landmarks when to turn and where.
